We harvest the morning of dispatch. Pulled from the long lines or the cylinders, graded on the dock, packed into chilled foam boxes with ice and damp seaweed. Quality-checked before the lid goes on.
We arrange the delivery window. Shipment timing depends on the season, the harvest and the courier route. The farm will talk through the right option for your order before anything leaves Dolphin Sands.
You take it from there. Shuck and serve, or repack into your cool room. The oysters keep, in shell, for up to a week refrigerated. Any issues, you call us, and we make it right.
